1 MINUTE BLUEBERRY FLAX MUFFIN

These 1 minute, high fiber blueberry flax muffins are a great breakfast option! Perfect for those busy mornings on the go.

 

INGREDIENTS

  • 1/4 cup ground flax meal
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1 teaspoon unsweetened apple sauce
  • 1 egg
  • 1/2 teaspoon coconut sugar
  • 1 tablespoon blueberries

 

DIRECTIONS

  1. Place the ingredients into a mug, stir and put it in the microwave for 60 seconds. Allow to cool, flip out of mug and enjoy.
  2. Timesaver trick: Mix dry ingredients the night before and in morning simply add wet ingredients and enjoy!

Serves 1
