HEALTHY SALAD DRESSINGS

Salad season is finally here! Change up your usual salad routine with these light and fresh salad dressing recipes that work well for any occasion – a weekday lunch or dinner, a picnic at the park or as summer BBQ side dish.

 

Lightened up Caesar dressing

INGREDIENTS

  • 1 clove of garlic, crushed
  • 2 teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon Worcester sauce
  • 1 egg yolk
  • 2 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar
  • ½ cup of extra virgin olive oil

 

DIRECTIONS

  1. Put all ingredients into a blender and blend on high until smooth and creamy.

 

Makes 1 cup

Nutritional analysis (per 1 tablespoon): calories 59, fat 7g, carbohydrates 1g

 

 

Basic balsamic vinaigrette

INGREDIENTS

  • ½ cup extra virgin olive oil
  • 1/3 cup balsamic vinegar
  • ¼ cup filtered water
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon pure maple syrup or honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

 

DIRECTIONS

  1. In a small bowl, whisk together olive oil, vinegar, water, lemon juice, maple syrup/honey, mustard, and garlic.

 

Makes 1 cup

Nutritional analysis (per 1 tablespoon): calories 70, fat 7g, carbohydrates 1g

 

 

Fruity grapefruit dressing

INGREDIENTS

  • 1/3 cup fresh grapefruit juice
  • 2 tablespoon white wine vinegar
  • ½ cup extra virgin olive oil
  • ½ teaspoon grated lemon zest
  • 1 teaspoon grated orange zest
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 teaspoon raw honey

 

DIRECTIONS

  1. Combine grapefruit juice, vinegar, olive oil, lemon zest, orange zest, mustard, sea salt, black pepper and honey in the bowl of a food processor. Purse to combine.
  2. Chill well before serving.

 

Makes 1 cup

Creamy honey mustard dressing

INGREDIENTS

  • ¼ cup Dijon mustard
  • ¼ cup raw honey
  • ¼ cup apple cider vinegar
  • ¼ cup extra virgin olive oil
  • 1 teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

 

DIRECTIONS

  1. Combine all ingredients into a small bowl and whisk together.
  2. Refrigerate for 2-3 hours before serving.

 

Makes 1 cup

Nutritional analysis (per 1 tablespoon): calories 47, fat 3g, carbohydrates 5g

 

 

Greek vinaigrette

INGREDIENTS

  • 1/2 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons oregano

DIRECTIONS

  1. Combine ingredients into small bowl and whisk together until blended.

 

Makes 1 cup
